What are the different kinds of tea?

The three main categories are green, black, and oolong. All three kinds are made from the same plant species. The major differences between them are a result of the different processing methods they undergo. Black teas undergo several hours of oxidation in their preparation for market; oolongs receive less oxidation, and green teas (including white teas) are not oxidized at all. There are, of course, many different varieties within these three main categories.

What about herbal teas?
Hundreds of different herbs have been used in beverages. These are sometimes called herbal teas. Tea professionals and connoisseurs usually prefer to restrict the name 'tea' to real tea, so you may see the following terms used as well:


A) 'Herbal infusion', which simply means a drink made by steeping an
herb in hot water. (Tea itself is an infusion of tea leaves.)
B) 'Tisane' [pronounced tee-ZAHN], which in French means any herbal
drink.

How to prepare the perfect cup of tea                                                     

If  you are unsure how to prepare tea, just be careful not to steep the tea for too long or it may become bitter. This is especially true when making flavoured white teas, green tea, oolong and black teas. Always consider the recommended steep or brew times as a maximun amout of time you should steep the tea. For stronger tea, increase the amount of tea, not the steep time.                                                                                                                                                                          

The tea preparation chart below explains the tea brewing process with specifics regarding the amount of loose leaf tea you should use per 8 oz. of water, at what temperature the water should be, and how long the tea must steep before it is ready. These are generalized steps for making loose tea and we recommend you look carefully at each individual tea, which may have slightly different tea brewing instructions.  For example, it takes a few minutes longer to make herbal tea (4-6 minutes) than to brew green tea (1 minute).  White and green teas should be brewed at a lower temperature ( 175º)  than oolong and black teas (195º) and herbal teas (208º).

*Allow both teabags and loose tea to steep 3-5 minutes. Herbal infusions should be steeped slightly longer for maximum flavour.


How to clean a teapot

Never clean a teapot in a dishwasher. Never wash or soak a teapot in soapy water.

Glazed, Porcelain or Bone China

Remove all used tea leaves. Rinse out the teapot with clean water then turn the teapot upside down to drain. Dry the outside of the teapot only, do not dry the inside, leave it to dry naturally. To remove tannin stains take two tablespoons of baking soda and fill the tea pot with boiling water, soak overnight. In the morning empty the water from the tea pot, rinse and leave to dry naturally.

Unglazed or Yixing  Teapots

Never clean or wash the inside of the vessel. The lining the teapot acquires is important to the flavour of the brewing. Use one teapot per tea blend. To clean the exterior of the tea pot, wipe with a damp cloth and dry immediately.

Assam Tea

The Brahmaputra River bisects the Assam region of northeast India. The region is not at high altitude but the soil is a deep sandy loam and the climate is hot and steamy. These conditions produce thick full-bodied teas that peak in quality during 2nd flush (month of June). Top quality 2nd flush Assams are considered by many to be amongst the finest teas in the world.

Assam Bukhial: Coppery and bright with full bodied strength. Add milk to experience the true malty character from one of the top Assam gardens.

Assam Gingia: Bright, full bodied liquor with nuttiness, almost a walnut character. Its classic thickness is juicy and malty.

Assam Keyhung: More than 60% of the estate is clonal giving Keyhung a distinctive taste. This 2nd flush tea is strong, full bodied with maltiness and rich in colour.

Assam Tarajulie: A wonderful tippy (containing tips of the leaf) tea that is full bodied with a round smoothness.

Black Tea

All tea leaves are green when harvested. Black tea is produced when the leaves are fermented or oxidized. Black tea is generally stronger in flavour and contains more caffeine than green or white teas.

Bamboo Temple Yunnan:  Assam-like briskness with a fresh Yunnan buttery toast and jam like finish.  Milk will give this tea a malty depth.

Kambaa:  From Kenya, the world’s 4th largest tea exporter. Has a strong body with a very malty flavour.

Ceylon Teas

Sri Lanka, formally known as Ceylon has 5 principal growing districts. These regions produce teas which are characterized to be light and flavoury, full bodied and thick, or having a malty fullness with floral notes.

Ceylon Courtlodge: Grown 4,000 ft above sea level, it is from a top Sri Lanka (Ceylon) estate. It is full flavoured with a light character.

Ceylon Kenilworth: Malty flavour that is full of life and very smooth. A fine tea after dinner or in the afternoon since it has a satisfying taste profile.

Ceylon Lover's Leap: The liquor is bright with excellent flowery flavour and a cup that tends somewhat light.  A good after-dinner tea.

Chai Tea

Chai by definition is a spiced tea. Originating in India this beverage is savoured for its rich, complex flavours using a perfect blend of freshly ground spices like cloves, cinnamon, nutmeg, ginger, cardamom and pepper. Chai can be brewed with water, then add milk and sweetened to taste or it can be brewed with milk and then sweetened.

Chai Spice (CAFFEINE FREE):  Use this chai spice to prepare a spiced drink.  It can be used with tea, milk or juice.

PREPARATION:  Half a teaspoon of spice per cup (150 ml) and allow to infuse for approximately five minutes then strain.                                                    Origin:  Blended in Canada.  Ingredients:  Cinnamon bark, ginger root, black pepper, coriander seed, star anise seeds, cardamom seed, clove buds.

Cochin Masala Chai: Full bodied tea enhances South Indian masala.  The finish has cardamom notes peeking out from lively ginger.  Superb with milk and sugar.

Green Chai: Blended with Indian spices to offer a different spin on Chai tea.

Rooibos Chai (CAFFEINE FREE): Mouth enlightening Malabar spices combine with sweet rooibos to create a herbal treat.  Milk adds a lovely creamy note and brightness in the cup

Decaffeinated Tea

We do not offer teas that use chemicals to remove caffeine. All our blends are NATURALLY decaffeinated using the chemical free CO2  process.

Earl Grey Blends

An old classic tea enjoyed by many.  We now have enough variations that it warrants its own section.

Cream Earl Grey: The Earl Grey you know and love mellowed with a delightful creamy vanilla taste. An excellent all day tea with a superb finish.

Apple Cider Spice:  The perfect way to spice up your apple or cranberry cider.  It can even be used in tea.

Oolong Tea

Oolong Tea is semi-fermented compared to Green Tea (unfermented) and Black Tea (fully fermented). Oolongs are easily recognized by the appearance of the leaves, which are stout, crinkled, and when infused, often tend greenish with reddish edges. Yerba Maté

Yerba Maté (Ilex paraguariensis) is a small tree native to the subtropical highlands of Brazil, Paraguay, and Argentina. The Guarani Indians of these regions introduced this evergreen member of the Holly family to colonizing and modern civilizations. The drink is brewed from the dried leaves and stemlets of this perennial tree. Yerba Maté is known as the national drink of these countries, and is consumed by millions of South Americans as a healthful alternative to coffee. This stimulating herbal beverage has the unique ability to wake up the mind without the nervousness and jitters associated with coffee.

Chai Maté: The cup has a vegetative and greenish character highlighted by cinnamon and ginger.

Tea Industry Terminology

Tea Grades

Commercial teas are given abbreviations such as “FBOP” and “TGFOP”. These are indicators of the grade of the tea. There are different grade systems for black and green teas, and these systems also vary by country. The important thing is to realize that the grades do not refer to the quality of the tea in terms of flavour, but rather to the size of the leaves.

Whole leaf teas being harder to produce and having greater visual appeal, command the highest prices and the best grades.  It’s not that the taste of the tea has nothing to do with the grade, as broken leaves will make a potent brew more quickly than whole leaves. But rather a teas grade has more to do with where, when, and how it was processed than with how it tastes.

Black Tea Grades

Black teas are divided into groups of whole leaves, broken leaves, fannings (tiny broken leaves) and dust (fragments so small they form a powder). Common abbreviations and terms include, in order of status:

~ OP-Orange Pekoe: Most people are surprised to learn that this term has nothing to do with orange-flavoured tea. Instead, it refers to the whole leaves, ideally of uniform size and rolled lengthwise.

~ P-Pekoe: Indicates leaves that are nearly whole, missing only the tip.

~ BOP-Broken Orange Pekoe: Indicates pieces of leaves that are relatively large and square shaped.

~ PF-Pekoe Fannings: Indicates small and irregular pieces.

~ F-Fannings: Indicates extremely small shreds of leaf. This is the grade typically used in commercial tea bags.

~ D-Dust: Tea powder.

These following initials are combined with other adjectives that qualify the type of tea within these basic grades, as follows:

~ F-Flowery: Indicates loosely rolled tea that includes gold tinged buds.

~ T-Tippy: Indicates an abundance of buds.

~ G-Golden: Indicates a golden tint in both the buds and ends of the leaves.

~ I-Imperial: Used with BOP to indicate a Broken Orange Pekoe with pieces that are unusually large.

In addition, the numerals 1 and 2 are sometimes used as well to distinguish between different teas of the same grade.

Green Tea Grades

The grading of green teas is even more subtle and varied than that of black teas. Japan, India, Taiwan, and China all grade green teas differently and with their own distinct lexicon. In general, green tea grades are less focused on the size of the leaves and more on the origins, taste quality and flush (picking).

~ Japan grades its teas primarily by style and quality. Some common types of Japanese green tea include (from best to least):

            ~ Gyokuro

            ~ Sencha

            ~ Tencha

            ~ Bancha

~ China greens are grades according to the age of the leaf and the finished shape and size of the leaf:

            ~ Gunpowder

            ~ Imperial

            ~ Young Hyson

            ~ Hyson

            ~ Twankay

            ~ Hyson Skin

            ~ Dust

Within these grades, there are specialized subcategories for different types (such as “Pinhead” Gunpowder, whose tightly rolled leaves form tiny pellets) as well as quality rankings such as extra, first, second, third, fourth, fifth, sixth, seventh, and fancy.
